OMNIVORE

PARMA HAM, MANGO, TARRAGON & SESAME SEEDS

For the salad, assemble:

80 g mixed salad leaves (e.g. watercress and wild rocket)

100 g mango, sliced

2 spring onions, thinly sliced

50 g Parma ham, thinly sliced

1 tbsp sesame seeds

handful of fresh tarragon leaves

For the dressing, mix:

1 tbsp extra virgin olive oil

1 tsp balsamic vinegar

pinch of salt and pepper

RAW

ALTERNATIVE

Replace the Parma ham with more sesame seeds and a handful of blueberries
